Easy meals to make while caravanning

When caravanning, a delicious meal is a perfect way to round off a day of adventures. Just because you’re not at home in your own kitchen, doesn’t mean you can’t eat delicious and tasty meals. You’re on holiday, a time to relax and enjoy yourself, so make sure you do treat yourself! 

Here we have a few tasty and easy meals you can make with minimal utensils and hob space, perfect for cooking in your cosy caravan. 


Spicy sausage pasta 

Just like at home, a pasta jar can go a long way. Why not give this spicy sausage pasta recipe a try. It’s quick, easy and super tasty!  

Ingredients include: 

  • 1 chorizo sausage per person 

  • 1 clove of garlic 

  • 1 onion 

  • Vegetable of choice (tinned sweetcorn or carrots work well) 

  • Mixed herbs 

  • ½ jar of pasta sauce per person 

  • 60g of Penne pasta per person 

  • Grated cheese of choice 



1. Slice the chorizo sausage into bite-size pieces and fry gently until the oil is released. 

2. Cut up your onion and garlic and add to the pan and fry until soft. 

3. In a separate pan, bring water to the boil to cook your pasta and follow packet instructions. 

4. Add the sauce and herbs to the pan of chorizo, onion and garlic. 

5. Add the vegetables to the frying pan you’ve just added the sauce to. 

6. Once ready, dish up and add your cheese to the top. 


Tasty bean and coconut soup 


This a great dish to warm you up and you can adapt the ingredients to whatever you may have in the cupboard!  


Ingredients include: 

  • 1tbsp oil 

  • ½ bunch chopped spring onions 

  • 1 diced red pepper 

  • 1 tbsp chilli paste 

  • 1 chopped clove of garlic 

  • 1 tsp medium curry powder 

  • 1 tin of tomatoes 

  • 1 veg stock cube 

  • 3 tins of any kind of beans (not baked beans!) 

  • 2 tins of coconut milk 

  • Juice of two limes 



  1. Soften the spring onion, pepper, chilli paste and garlic in the oil.  

  1. Add curry powder and cook for one more minute. 

  1. Stir in the tomatoes and cook for a couple more minutes. 

  1. Crumble the stock cube into the mixture. 

  1. Add the tins of beans (drained) and the coconut milk. 

  1. Simmer for ten minutes or so. 

  1. Add lime juice and seasoning 

  1. Ladle into bowls and enjoy! 


Lentil, Spinach and chickpea curry 

This delicious dish is full of wholesome veg and pulses. It will give you the energy you need for those lovely walks you may have planned! 

Ingredients include: 

  • 2tbsp oil 

  • 1 chopped onion 

  • 2 crushed cloves of garlic 

  • 2 tbsp curry powder 

  • tin of tomatoes 

  • tin of green lentils 

  • tin of chickpeas 

  • 1 bag of baby spinach 



  1. Soften the onions in the oil.  

  1. Add the garlic and curry powder and cook for a couple more minutes. 

  1. Add tomatoes, lentils and chickpeas and simmer for ten minutes. 

  1. Just before serving, add the spinach so that it wilts. 

  1. Serve with naan bread (optional). 


Smoked Salmon Pasta 

On your lazy days why not try this dish which is so simple yet so tasty! 

Ingredients include: 

  • Two tubs of cream cheese 

  • Pasta of choice 

  • Smoked salmon 


  1. Boil pasta in a pan until al dente. 

  1. Drain pasta and stir in cream cheese and salmon ribbons. 

  1. Warm over gentle heat for a minute or so. 

  1. Serve in bowls, with garlic bread (optional).
